Making Protein Balls for Kyle

I was finally able to convinced Kyle to go see my naturopath, and since then he has really been trying to be gluten, dairy, and refined sugar free.

Mornings have always been really tough in our house. Mostly because Kyle and I usually don't make the time to prepare breakfast before leaving for the day. The only thing we are religious about doing is making a green protein smoothie, so I came up with this recipe as a way to have a healthy, quick breakfast option Kyle could eat in his truck on the way to work.


Protein Balls
(Makes 50 - 1 inch balls)

Ingredients:
2 Cups - Gluten Free Rolled Oats (I use Bob's Red Mill)
1 Cup - Ground Flax Seeds
1/2 Cup - Hemp Hearts
1 Cup - Ground Pecans
1 Cup - Ground Walnuts
1 Cup - Almond Slices
1 Cup - Shredded Coconut
1/2 Cup - Macadamia Nuts
1/2 Cup - Ground Chocolate Chips (I use Enjoy Life)
1/4 Cup - Raw Honey
1/4 Cup - Pure Maple Syrup
1 Tsp - Pure Vanilla Extract
2 Cups - Smooth Almond Butter (with no added sugar)

Place oats, flax seeds, hemp hearts and shredded coconut in a large mixing bowl. Grind all the nuts and chocolate chips separately in a food processor, and add to the oat mixture. Once stirred, combine the honey, maple syrup, vanilla and almond butter.

Line a container with parchment paper. Lightly roll the mixture into 1" balls using your fingertips. Place directly into the refrigerator to cool and harden before eating.

Store in the refrigerator for up to a week, or in the freezer for a longer period of time.

My First Blog Post!


I can still remember the moment I first decided to start my own blog. I was sitting on the couch with my laptop scrolling through the very few design blogs I knew of at the time, dreaming about one day having a design business of my own. Up until that point, it was all just a fantasy. I knew nothing about owning my own business, and definitely have no idea how I would find my first client - but the seed was planted. I didn't have a plan, but I thought starting a blog would be a good start. (I will write more about truly starting my business in another post!)

 Three and a half years after having this blog designed, I am finally sitting down to write. The truth is, this blog really never felt like me. You know when you can tell something is Kate Spade, or Sarah Richardson? They have their own unique look, and most people can tell them from other designers in their field. Well, I was never really inspired to start writing because my logo, text and colours just weren't what I wanted my brand to be.

 For those of you who know me and know my style, I am completely in love with antlers, fresh cream and blush coloured flowers, a black and white simple design with subtle hits of colour, and anything that has a farmhouse/antique/cottage/lived in/cozy/fresh/relaxed feel. Well, that just isn't my blog. So I am currently working on a full rebranding of Kate Kristiansen Design, because I want everything I do and all the elements related to my business to reflect my style, and be completely authentic.

Now that I am truly inspired by the thought of a new design, I am finally ready to start blogging!
